Organic Einkorn Chocolate Chip & Pecan Cookies

Crispy & Soft but Not too sweet chocolate chip cookies made with organic coconut sugar and einkorn flour! Bake them for parties or make them around this Holyday with your littles!

 

WHAT WE LOVE:

Einkorn :These special cookies are made with einkorn flour a type of wheat that's most gentle on your body and preferred than a refined flour.

Coconut Sugar: Coconut sugar is kind to your body. Less sugar spikes for anyone that finds cookies too sweet. You'll love making the switch to coconut sugar as you will notice the difference in taste and how your body feels after tasting this delicious treat. 

 

INGREDIENTS:

EINKORN FLOUR- 1 1/2 CUPS

COCONUT SUGAR- 1/3 CUP

BROWN COCONUT SUGAR- 1/3 CUP

BAKING SODA- 1/2 TSP.

CELTIC SALT- 1/2 TSP.

PURE VANILLA EXTRACT (THE REAL STUFF NOT IMITATION)- 1-1/2TSP.

PASTURE-RAISED EGGS- 1

HIGH QUALITY SOFTENED BUTTER LIKE GRASS FED- 1 1/2 STICKS

SEMI-DARK ORGANIC CHOCOLATE CHIPS-1 CUP

PECANS- 3/4 of a CUP

 

Preheat oven to 350. Beat coconut sugar, brown coconut sugar, vanilla, butter until you see a paste form then, add the egg and mix until it's one consistency. In a seperate bowl mix the dry ingredients; einkorn flour, celtic salt and baking soda. Mix the dry & wet ingredients gently and add the pecans and chocolate chips. Once it is all incorporated portion cookies 3 inch balls and bake for 9-11 minutes. Keep an eye on them the last three minutes. Depending on your preference you can keep them on the softer side (9 min) , (10 min) for a soft crunch or (11 mins) for a crunchier cookie!
